Warm Sticky Chocolate Brownies

These scrumptious sticky chocolate brownies are perfect for a winters evening, especially when served warm with vanilla ice cream on the side.

Cook time: 25-30 minutes @180º Fan - 200ºC - 400F - Gas Mark 6

Ingredients:

90g unsalted softened butter;

140g caster sugar;

100g soft brown sugar;

125g plain chocolate;

2tbsp golden syrup;

2 eggs;

1tsp vanilla extract;

1tsp baking powder;

100g sieved plain flour;

2tbsp sieved cocoa powder


Recipe:

1. Preheat oven to 180°C Fan / 200°C / 400°F / Gas Mark 6 and line a 20cm square tin.


2. Put 90g unsalted softened butter; 140f caster sugar; 100g soft brown sugar; 125g plain chocolate; and 2tbsp golden syrup into a heat-proof bowl and place over a saucepan with little water in (be careful that the water does not touch the heatproof bowl). Stir until well blended and smooth. Remove from heat and leave too cool.


3. Beat together 2 eggs and 1tsp vanilla extract and whisk in the cooled chocolate mixture.


4. In a separate bowl sift 1tsp baking powder; 100g sieved plain flour; and 2tbsp sieved cocoa powder, and gently fold into the egg and chocolate mixture.


5. Spoon the mixture into a tin and bake in the oven at 180°C Fan / 200°C / 400°F / Gas Mark 6 for 25 minuets or until the top is crispy and edges start to shrink in from the edge of the tin.


6. Leave in tin too cool and cut into even pieces.
