The best tip I can give you whilst making pizzas is cooking it on baking parchment. It allows the pizzas to cook fully through and has a nice crispy texture. These pizzas are filled with flavour, especially from the toppings!

Medium Recipe
Serves 3
Ingredients - For the dough:
390g sieved strong white flour;
110g sieved semolina flour;
2tsp fine sea salt;
1tsp oregano herbs;
1tsp thyme herbs;
1tsp basil herbs;
2tsp extra virgin olive oil;
7g dried Yeats;
310ml Luke warm water;
1tbsp golden caster sugar.
Ingredients - For the sauce:
2 cloves of garlic;
1 bunch of fresh basil;
olive oil; 1x 400g tin of chopped tomatoes
Recipe - For the dough:
Pile the flours, 2tsp fine sea salt and Italian mixed herbs onto a clean surface and make a deep well in the centre.
Add the yeast and sugar to 320ml lukewarm water and mix well. Leave for a few minutes and pour into the well.
Using a fork or spoon, slowly bring in the flower in a circular movement. Continue to mix with the fork or spoon until the dough starts to come together. Flour your hands and being to bring the dough into a ball shape.
Knead the dough by rolling it back and forth with your hands, stretching and pulling the dough. Knead for 10 minutes and place the dough in a lightly greased bowl and cover with clingfilm and leave in a warm place to prove for an hour.
Recipe: For the Sauce:
Peel and finely slice the garlic and pick the basil leaves and finely chop the stalks.
Heat 1tbsp of oil in a pan and add the garlic and basil stalks - cook for a couple of minutes. Add the basil leaves, tomatoes and a pinch of salt and pepper.
Leave the sauce for 20 minutes stirring regularly and breaking up the tomatoes with a wooden spoon.
Recipe: For the Pizza:
Divide the dough into 3 balls and cover in cling film and leave for 15 minutes, making it easier to roll thinner.
Preheat the oven to 250°C / 500°F / gas mark 9 . Cut the baking parchment for the size of the baking tray/stone/pizza tray you are using and place on top.
Dust the baking parchment and begin to roll the dough out on the baking parchment until about 1/2cm thick.
Time to apply toppings! Spread the passatta sauce over the base right to the edges of the pizza. Add your own flavours of toppings to your pizza.
When you are ready to cook your pizzas, place in the oven at 250°C / 500°F / gas mark 9 for 10-15 minutes or until the pizza is golden and crispy.
