This banana cake is the best way to use up overripe bananas, whilst making a yummy cake. Topped with thick layers of frosting, its the perfect way to enjoy afternoon tea. So come and treat yourself!

Serves 12
Ingredients for the Cake:
180g softened, unsalted butter;
110 caster sugar;
60g golden caster sugar;
3 large eggs;
3 ripe bananas, mashed;
170ml double cream;
1tsp vanilla extract;
390g sieved plain flour;
1tbsp cornflour;
1tsp bicarbonate soda;
1/2tsp ground cinnamon;
1tsp salt
Ingredients for the frosting:
220g softened cream cheese;
115g softened, unsalted butter;
500g sieved icing sugar;
2tsp vanilla extract;
55ml double cream;
80g walnuts.
Recipe for the cake:
Preheat the oven to 170°C Fan / 190°C / 375°F / Gas Mark 5 and line two 19cm cake pans with parchment paper, greased with butter.
In a large bowl, mix together the butter and sugar until smooth and fluffy. Add the eggs, one at a time, and the mashed bananas until smooth.
In a medium bowl, mix the sieved flours; bicarbonate soda; ground cinnamon and salt. Add the dry ingredients to the wet mixture and beat until fully combined.
Divide the mixture evenly between the two cake tins and place in the oven at 170°C Fan / 190°C / 375°F / Gas Mark 5 for 20-25 minutes or until a skewer comes out clean.
Let the cake cool for 5 minutes, then turn onto a wire rack to completely cool.
Tip: if you made the cake early, cover the cake in cling film before doing the frosting and place in a airtight container until 30 minutes before you eat. The cake tastes better when the frosting is made nearer the time, without having to place the cake in the fridge.
Recipe for the Frosting:
In a large bowl using a whisk, beat together the cream cheese and butter until smooth. Fold in the sieved icing sugar and beat until smooth. Add the vanilla extract and double cream until fully combined.
Spread just less then half the mixture onto one layer, sandwiching the cakes together. Top the second layer with the rest of the frosting and garnish with walnuts.
