Sister's Triple Chocolate Oat Cookies



My sister's triple chocolate oat cookies are delicious, soft and chewy. These cookies get their trio chocolate yummies from the trio of cocoa, milk chocolate chips and white chocolate chips.

Cook time: 10-15 minutes @175°C Fan / 195°C / 390°F / Gas Mark 5

Easy Recipe

Makes 15



Ingredients:

2 eggs;

115 unsalted butter - softened;

2tbsp cocoa powder - sieved;

135g plain flour - sieved;

50g oats;

100g milk chocolate chips;

100g white chocolate chips;

1/2 tsp vanilla extract;

Pinch of salt;

1/2 tsp baking powder - sieved.



Recipe:

Heat the oven to 175°C Fan / 195°C / 390°F / Gas Mark 5, and line a baking tray with parchment paper.


In a large mixing bowl, combine the eggs, sugar, vanilla extract and melted butter until smooth. Add the sieved flour, sieved cocoa powder, oats, salt and baking powder. Once combined, fold in the chocolate chips and leave to chill in the fridge for 20 minutes.


Roll the mixture into 15 cookie balls and separate on the baking tray. Place in the oven at 175°C Fan / 195°C / 390°F / Gas Mark 5 for 10-15 minutes.
