Serve on its own or as a side dish with a Chinese banquet. With the pineapple mixed into this delicious dish, it has an extra special twist to it.
Ingredients:
3tbsp oil;
2 eggs, beaten;
3 garlic cloves, crushed;
Half an onion, finely chopped;
1tsp Chinese five spice powder;
400g long-grain rice;
90g frozen peas;
2tbsp sesame oil;
5tbsp low-salt soy sauce;
400g fresh pineapple, roughly chopped into small chunks.
Recipe:
Fill a medium sized pan with boiling water and cook the long-grain rice until its cooked and fluffy. Leave the rice to drain and cool.
Heat 1tbsp oil in a deep frying pan and add the beaten eggs, making them into a thin omelette. Once cooked, slide the omelette onto a chopping board and cut into long ribbons.
Heat the remaining oil and add the garlic, onions and five-spice. Stir-fry until sizzling and the onions start to go golden brown. Then stir in the rice, peas, sesame oil and soy sauce. Cook on a high heat until the rice is hot and gently stir in the pineapple and omelette ribbons.
