Mini Egg Chocolate Chip Cookies



These Mini Egg Chocolate Chip Cookies are a delicious snack when it comes to Easter. I mean who doesn't love a good chocolate chip cookie with mini eggs? This mini egg recipe is so easy to follow and perfect for a sweet snack!

Cook time: 10 minutes @170º Fan - 190ºC - 375F - Gas Mark 5

Easy Recipe

Makes 16



Ingredients:

100g softened, unsalted butter;

50g demure sugar;

50g caster sugar;

1 egg;

2tsp vanilla extract;

150g sieved plain flour;

1tsp bicarbonate of soda;

1/2 tsp salt;

50g milk chocolate chips;

140g mini eggs.



Recipe:

Heat the oven to 170º Fan - 190ºC - 375F - Gas Mark 5 and line a baking tray with baking paper.


Blend together the butter and sugar until light and fluffy. Whisk in the egg, vanilla extract, plain flour, bicarbonate of soda and salt until thick and smooth. Fold in the chocolate chips and mini eggs.


Using a tablespoon, scoop the mixture onto a baking tray and place the cookies in the oven at 170º Fan - 190ºC - 375F - Gas Mark 5 for 10 minutes or until they are easily able to slide off the baking tray. Leave to cool on a wired rack.
