Tomato Feta Salad makes a great addition to flavourful meats and fish, especially when it comes to tuna. With this dish having three different parts, it brings more variety of colours to your plate.

Cook time: Baby Pearl Potatoes = 1 hour @200º Fan - 230ºC - 450°F - Gas Mark 7
Tomato and Feta Salad = 25 minutes @180°C Fan/200°C/400°F/ Gas Mark 6.
Tuna Steak = 6 minutes

Serves 4
Ingredients:
4 tuna steaks (about 140g each);
2-3tbsp fennel seeds and coriander seeds;
150g fine asparagus;
80g rocket and chive salad;
6tbsp oil;
Ingredients for the Baby Pearl Potatoes:
500g baby pearl potatoes (or new potatoes);
2tsp salt;
Ingredients for the tomato and feta salad:
500g cherry tomatoes;
340g feta cheese
50ml olive oil;
2tbsp minced fresh basil leaves;
1/2tsp freshly ground pepper
Recipe:
1. Toss 500g of baby pearl potatoes in a bowl with 2tbsp oil and plenty of salt. Tip onto a baking tray and place in the oven at 200°C Fan/ 230°C/420°F/ Gas Mark 7 for an hour or until golden.
2. For the tomato and feta salad: toss 500g cherry tomatoes; 50ml olive oil and 1/2tsp freshly ground pepper in a bowl. On a chopping board, chop 340g feta cheese into small cubes and mix in with the tomatoes. Tip the tomato and feta mix in an oven-proof dish and sprinkle 2tbsp minced fresh basil leaves over the top. Place in an oven for 25 minutes at 180°C Fan/200°C/400°F/ Gas Mark 6.
3. Fry the asparagus and 2tsp of salt in a frying pan drizzled with oil until it starts to go golden-brown.
4. In a large bowl mix together 4 tuna steaks; 2tbsp oil; and 2-3tbsp fennel seeds and coriander seeds. Once mixed, cook the tuna steaks on a griddled pan turning after 2 minutes and cooking for another 2 minutes on both sides depending on the thickness of your steak. Remove the steaks from the griddle and allow to stand for 3-5 minutes.
5. Serve the tuna steaks on a plate with baby pearl potatoes; rocket and chive salad; tomatoes and feta salad; and asparagus.
