These scrumptious hedgehog potatoes are easy to make and perfect for a Sundays roast.

Ingredients:
6 large baking potatoes;
Oil;
Butter
Recipe:
1. Shred and cut the 6 large baking potatoes in half (length wise).
2. Part boil the potatoes for 10 minutes at medium temperature.
3. Place the half-cut potatoes flat-side down on a baking tray and allow to cool.
4. Once cool, thinly slice breadth wise. Be careful not to slice all the way through. Melt butter and oil, and pour over the potatoes.
5. Place in oven at 200°C Fan/220°C/450°F/Gas Mark 7 for 45 minutes or until golden brown. Take out the oven and serve.
