These banana muffins are buttery, soft and flavoured with white chocolate chips - perfect with afternoon tea or to have as a delicious breakfast muffin.

Ingredients for the mixture:
95g softened, unsalted butter;
2 eggs;
165g caster sugar;
210g sieved self-raising flour;
1tsp sieved baking powder;
3tbsp milk;
2 very ripe bananas - mashed;
50g white chocolate chips

50g white chocolate chips;

Recipe:
Heat the oven to 175º Fan - 195ºC - 385F - Gas Mark 5 and line a 12-hole muffin tray with paper cases.
In a mixing bowl, whisk together the butter; eggs; milk and caster sugar until smooth and fluffy. Fold in the sieved self-raising flour and baking powder.
In a bowl, use a fork to mash up the bananas and mix with the white chocolate chips, and add to the mixture.
Evenly pour the mixture into the 12-hole muffin tray and place in the oven at 175º Fan - 195ºC - 385F - Gas Mark 5 for 25 minutes. Leave too cool for 10 minutes.
For the icing: melt the white chocolate chips and drizzle over the muffins and leave to fully cool and for the icing to set.
