These shortbread biscuits are wonderfully crumbly and are perfect for Afternoon Tea with friends and family.

Makes 20
Ingredients:
260g sieved plain flour;
100g caster sugar
100g unsalted softened butter;
1 egg;
2tsp vanilla extract
Recipe:
1. Preheat the oven to 190º Fan - 210ºC - 410F - Gas Mark 6 and line a baking tray with parchment paper.
2. In a mixing bowl, sift together 260g self-raising flour and 100g caster sugar. Mix in 100g unsalted softened butter until the mixture is crumbly.
3. Mix together 1 egg and 2tsp vanilla extract and fold into the mixture until it forms a dough.
4. Roll the dough out on a lightly dusted surface to a thickness of 1cm. Using biscuit cutters, cut biscuits out of the dough and place onto the lined baking tray. Repeat until all the dough is used up.
5. Place in the oven at 190º Fan - 210ºC - 410F - Gas Mark 6 for 10 minutes.
6. Leave to cool and serve.
